You showed a GNOME problem not a Wayland problem. GNOME does this thing where the dialog box that appears for the application is always centered at all times regardless. So when the user tried to move it, it made the main window de-maximize so that it can be moved along with the dialog box like glue because GNOME devs are retarded enough to think this is a good idea for some reason.

So why does everything work under Xorg and not under wayland? Starsector for example won't even launch on Debian 12 + wayland but with xorg it works. Same with a bunch of appimages I use such as ledger live and etcher.

ill show you a gayland problem then
gayland cant remap keys properly
you dont get xrandr and custom modelines/modes, that means no interlacing for you chud
you cant disable the compositor bloat, vsync, etc…
it has shitty performance, if your compositor dies all your windows die with it
and if you use lets say sway, you cant just mask suspending on lid close with systemd while still turning off the screen, or it will ack, crash, not turn your screen back on, and throw a bunch of errors into your tty after you manually ssh'd into your computer from another machine because you cant even fucking switch to another tty if gayland crashes and just freezes without exitting.
unlike X11, gayland crashes randomly a LOT, so thats even more problematic/
