It's mostly modern with some liberties, for example you can store books in bookshelves like they're chest and some more. It's about 1.16 I'd say, they have the updated nether netherite and all that but not the super modern 'raft killing dust. It also has a very distinctive world gen, not like anything I've seen in 'raft, much more creative and less "natural".

Sort of. I only played a little b1.7.3 so I don't have that much of a reference, but it doesn't aim at simulating the real word, has normal (old) cave systems, and very weird mountains, much bigger then those in beta or caves and cliffs (even doe I didn't play that, so I'm judging from videos I've seen). They aren't natural either. The other main thing is rivers, which are much bigger and of higher importance then in the original 'raft. They cut deep into the ground, creating about 20 blocks deep channels for themselves, forming islands in what would otherwise be near flat plains.
It's very similar to beta in the way that the devs don't care about simulating nature and just let the generator do its own thing, not really messing with the RNG by trying to smooth it out ect. You'll often find deep holes in the mountains, floating islands, and shapes that don't even try to pretend to play along with gravity.

i'd say 80-90% of 1.19 is complete, it has copper and WIP guardian/sculk shit, but its not finished yet
a few things from 1.12 are missing too, pillager raids and i think mansions, or at least i havent found a mansion yet, they might just be very rare
large structures that arent villages are also missing, the end dungeon is smaller than normally, nether fortresses are small (or i think they fixed that already, not sure), and end cities arent a thing yet, but boats with shulkers and elytras exist.
